Hi,
I did some research and unfortunately most of the generators seems to be
unable to create an accessible flip book, as they convert your PDF/HTML to
a solid image element.
But I found an interesting website, which has some samples of accessible
flip books, called PublicSpeak <http://www.publispeak.com/en/>. You can see
some samples in their page, the content of the flip books is built by
semantic HTML, keyboard friendly buttons, and also the ability to choose
your own accessibility preferences (text, background color, etc.) . I also
tested the page with JAWS, AXE and WAVE. Expect the language attribute
which is set to "french" and screen reader will read the page with french
accent, no major issues was observed.
Here is the sample:

I also believe that you can always provide an accessible version of your
product (an alternative version), for people who cannot use the main one.
Probably a download link of the original accessible PDF?
